The winery was
built according to the objective of producing high end quality wines
which identify

the
potential of the terroir. Therefore, it is equipped with the most modern
technology, including a pneumatic press, gentle pumps, and a temperature
interchange system (heater and cooler) for both grapes and must.
The capacity of the cellar is 12.000 hectolitres within 100% stainless
steel tanks. There are 56 tanks in total, with capacities of 400,
300, 200, 100, 50, 20 and 10 hectolitres, all of them with temperature
controlled systems. The range of sizes allows Leyda to separate different
lots and trials, then to classify and incorporate them as important
components of the final blend.
To achieve a good aging of the wine, it is important to use a diverse
selection of oak barrels. Most of the barrels are french
oak, from several coopers including Demptos,
Seguin Moreau, Taransaud, Francois Freres, Vicard, Dargeau and Ermitage.. Besides
that, Leyda also likes to work with different forests such as Allier,
Nevers, Troncais and Vosges so that the wines obtain more complexity
and elegance.
