CHARDONNAY, Lot 5 - Wild Yeasts
The concept behind Lot 5 is the clear expression of the character of our estate, trying to not interfere in the natural process of ripening of the grapes and its fermentation. In the vineyard, Parcel Number 5 is carefully managed during the season. However the vines are not excessively interfered in order to conserve the variability of ripeness and character of each year. Concerning to the winemaking, Lot 5 stands for a selected lot, made using complete oxidative techniques and without any intervention or addition to the must. It is aged in French oak barrels for 12 months where it ferments naturally, with only the wild yeast strains present in the grapes. The result is an extremely complex wine, often a bit funky, with different layers of aromas and flavours , given by the natural dynamic of the fermentation and a wide, dense and mineral palate, that finish with a fresh but persistent toasted hazelnuts driven aftertaste.
